Salt Roasted Beets with Feta, Orange & Mint
Ingredients

3 large beets

2.00 kg kosher salt (can be reused)

1 orange peeled and sliced across segments

30 g honey

200 g Macedonian feta

1 bunch fresh mint

extra virgin olive oil
Directions
- Pack the beets (with skins on) in the salt, place in a roasting pan and place in a 300 degree oven for 3 hours
- Mix orange juice, honey and zest
- Once the beets are done, remove them from the salt. This requires breaking up the salt (a mallet or hammer works well for this.) Gently lift beets out with a steel serving spoon. Wipe excess salt off beets
- Using a paring knife and a clean towel you don’t mind staining remove the skins
- Slice into rounds with mandolin or sharp knife
- Toss the beets in a little olive oil, pepper and orange juice dressing and place a few slices on each of the 6 plates.
- Place chunks of feta on each plate and arrange orange slices on top. Garnish with a few pieces of torn mint
